We have a lot of great chef-cuts like inside skirt, flank from Japanese A3 Wagyu.
-Older cows are renowned in Spain and much of the rest of the world. New 5 year old Mrs. Hida is available in lower A4 marbling which is meaty. One customer said they could "eat this all day every day".
Fat-Tail Sheep half and whole lamb are in high demand. A lot of people want just tail fat but we do not have abundance of just fat. I am expanding the herd to accommodate!
Mangalitsa Pig Pre-order only. Sorry for the delay; due to heavy rains this year almond season was delayed so we are still finishing the mangalitsas from August order. In future, we will not be harvesting in-tact boars due to their leanness (only Barrows and Gilts with high fat content)
