While it is true that some of the raw enzymes in manuka honey will be killed by the heat, the MGO will not be! This is one of the reasons why manuka honey is the only one approved for medical use. In care settings like hospitals or hospices, they often use manuka which has been "sterilized" using high heat or gamma irradiation.
Pro Tip: When you heat manuka honey the MGO will actually spike and then start decreasing again. Because of this, you want to eat your baked goods or drink your tea right away and not store it to maintain its medicinal benefits.
