Their wines are old-school icons, but unless you have considerable patience you might struggle to understand what the fuss is about, or even to find them. More consistently appealing are the wines of another long-established estate, William Fvre. This is perhaps the greatest landowner in Chablis, with vines in all 7 of the appellations Grand Cru vineyards.

This wines intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. Mostly located in Vaillons itself, in the centre of the steep slope. Glowing pale green with a lean and hungry nose. The wine opens out really well on the palate, this one has nailed the vintage, with an extra gloss, delicious perfume on the classic bone structure. I love the crunch and energy of the aftertaste.
