From the home of Ferrari comes the world's most romantic vinegar. And it's on sale.

We had the pleasure of spending time (virtually) with Simone Tintorithe next generation leading La Vecchia Dispensain his acetaia on Thursday. We were holding our monthly staff meeting and Simone "Zoomed" in from Italy (at 2 AM local time) to show us the art and skill of blending balsamic from barrel to barrel.

Since the acetaia (the building where you age the balsamic) is open to the elements, Simone's breathe hung in the cold night air as he pulled up a measure of balsamic from a barrel into a large glass pipette nearly a meter long. At the end of the pipette was a glass bulb that held the vinegar in reserve.

Simone brought a candle up to the bulb to illuminate the liquid inside. The balsamic gave off a lusciously deep red color against the flame, telling Simone how the vinegar is developing. He might blend an older balsamic in, deepening the color and flavor, sharing a secret from one barrel with another. This is the art, skill, and experience of making balsamic. It's why balsamic is one of the most romantic foods in the world and why it makes such a great gift.
