FRIDAY FOOD CHALLENGE
Cauliflower Fritters
Cauliflower, broccoli and cheese fritters served on an eco rascals plate
Cauliflower, Broccoli & Cheese Fritters
2 large free range eggs125gself raising flour125gchopped broccoli (cooked)250g chopped cauliflower (cooked)175g grated cheddar cheese
Makes 12-15 frittersYou can freeze or serve cold the next day.
Steps
Prepare the broccoli and cauliflower - boil or steam until al dente and finely chop once drained.
Beat two eggs in a large mixing bowl together until well combined.
Add the flour, broccoli, cauliflower and cheese and mix together.
In a frying pan with a little bit of oil, scoop out the mixture and fry like you would a pancake.
Make sure the pan isn't too hot so the fritter can cook all the way through without burning.
If you want to enhance the flavour, after step three, you can add in optional seasoning such as salt, pepper, lemon zest, parsley, chives, garlic, or paprika.

Serving Suggestions
These easy cauliflower, broccoli and cheese fritter make a great babyled weaning recipe and can be served up on their own.
You can also serve as part of a varied meal and they go well with a dipping sauce such as greek yoghurt and tomato salsa .
Accompany with colourful sides such as avocado, quartered cherry tomatoes, cucumber and sweetcorn.
Adaptation & Toppings
Fritters can be adapted to suit your child's tastes and needs.
To make them gluten free, you can swap the self-raising flour for almond flour.
To make them egg free, you can substitute with water and mix the water until the desired consistency.
Swap the broccoli for sweet potato, potato, carrots, parsnips, Brussel sprouts etc.
