FRIDAY FOOD CHALLENGE
Homemade Chicken & Vegetable Soup
Cauliflower, broccoli and cheese fritters served on an eco rascals plate
Homemade Chicken & Veg Soup
1.5l Chicken Broth4 Garlic Cloves250g Chicken Breast, whole100g Carrots, diced100g Celery, diced100g Onion, diced
Serves a family of five.Best served hot but can be cooled and frozen for 2-3 months.
Ingredients needed to make the soup
Steps
Place all the ingredients into a large saucepan.
Cook on medium heat for 45 minutes, allowing the flavors to meld together.
Remove the whole chicken breasts and shred them.
Serve the clear chicken soup with shredded chicken on top.
OR Blend the vegetables and clear broth to make a hidden vegetable soup.
If you want to enhance the flavour, after step two, you can add in optional seasoning such as salt, pepper, lemon zest, parsley, chives, or paprika.

The beauty of any soup is how customisable they are. I always recommend taking a peek into the vegetable drawer in your fridge and freezer and throwing anything else in you think would work. This soup would taste fantastic with some spinach, peas or any root veg. If you want to bulk the soup out a little bit, you can add some cooked pasta or rice to the mix.
