Salted Caramel Stuffed Cookies
The time for holiday cookies has sadly passed, and you've stowed your cutters and tins in the basement until next year. But while the time for rum balls and gingerbread cut-outs may be behind us, everyday cookies have no season, and we at King Arthur continue to develop great recipes for them all year round. Consider, for example, these Salted Caramel Stuffed Cookies. Made with an oatmeal cookie base, baked in a muffin tin so they're extra thick, and boasting a gooey salted caramel center, these are an any (every?) time cookie. Another all-season cookie? Chocolate chip. We have dozens of recipes on our site, so whether you like 'em crisp or chewy, made with buckwheat flour or good old all-purpose, there's a chocolate chipper for you. The recipe for Sourdough Chocolate Chip Cookies, our latest addition to the collection, comes from pastry chef Caroline Schiff. They're made with all-purpose and bread flours, active sourdough starter or discard, brown butter, and two types of chocolate, some of which is placed on top of each cookie where it melts into irresistible puddles. And if puddles of chocolate aren't mesmerizing enough, watch this video of my coworkers making these gorgeous
"printed" sugar cookies. Using a simple technique, they turn our cream cheese roll-out dough into some of the coolest cookies I've seen.
