Looking to add a little oomph to any recipe? Brown your butter before using! This is a quick and easy way to add a hint of nuttiness to your bakes.
Please note, this won't work with vegan or low calorie butters. You'll need the real deal for brown butter!
Depending on your stove and saucepan, the whole browning process should take about 10-15 minutes. You will need to stir frequently and keep your saucepan in sight to ensure your butter doesn't burn.
1. Place the amount of butter your recipe calls for in a saucepan over medium heat. Let the butter melt.
2.Once the butter is completely melted, stir frequently and watch closely for the milk solids to fall to the bottom of the pan. When you're almost done, the butter will start to foam and the milk solids will begin browning.
3.Continue cooking and stirring until the butter smells lightly nutty and turnsthe brown color of your liking, the longer it cooks the browner and more pronounced the nuttiness will get.
4. Remove your saucepan from the heat and transfer the brown butter into a heat proof bowl, scraping all of the browned milk solids out of the pan (This is where most of the flavor comes from, aka the good stuff).
If your recipecalls for melted butter, proceed with next steps.
If your recipe calls for softened or room temperature butter, pour the brown butter into a heat proof bowl and let cool in the fridge for about an hour and 40 minutes, or until the texture of softened or room temperature butter.
Some important brown butter tips:
When browning, the butter loses some of its water content, so you may need to add some additional liquid to your batter if you find it looking too thick when substituting in brown butter. If this is the case,add about 1 tablespoon of water at a time to your batter to get it to the desired consistency.
While browning the butter, you can brown it to your liking. The lighterit is, the less noticeable the nutty flavor is, while the darker you let the butter brown, the richer the color and nutty flavor will be.
If making something light-colored, such as frosting or vanilla cake, the brown butter will add some dark brown milk solid specks (similar to when using vanilla beans) and a touch of an off-white to brown color depending on how brown you let the butter get.
Brown butter can be used for savory dishes as well, such as on vegetables or meat, or solidified in the fridgeand used as a spread.
