Holiday Stress...What!?
It's that time of year again. You know how I know? Because it gets stressful around my house. Business gets slow (people apparently don't like eating healthy during the holidays), the grocery stores are busy, and everyone seems to give my kids copious amounts of sugar. It makes it stressful. Well, here are a few ideas to make it less stressful during the holidays.1. Eat better! No really, it's true. Crappy eating makes you feel unhealthy and feeling bad leads to stress...which then people will eat badly to compensate...which leads to more stress. I know a place that can help.2. Say No. You don't have to do everything. Just because the word no is the opposite of yes does not mean that it's a bad word. No is freeing! No puts you in control! Use it, say no!3. Chill out. Its already cold enough outside but make your home a place to relax, not a place with more chaos. Get a candle, find some classical holiday music. Make your house the refuge, not the hellhole.Looking for more tips? Check out this article from the Mayo Clinic.

Greatest Italian Meatballs!
No Seriously, these are delicious. If I were a mob boss, I would forgo capping someone if they offered me these. Not to mention it comes with the best marinara sauce on the planet (made with three types of tomatoes) and served with Sous Chef Blaine's favorite broccoli. Its charred and tossed with garlic and parmesean cheese.

We get lots of bad reviews because, frankly, people don't know how to use their own microwave. This isn't rocket science, it's just science... Invented by accident, over 90% of Americans have a microwave, and by my informal poll, nobody knows how to use it. Here are some tips:1. Remove the plastic top. Not important to heating it up, but its easier to get off before its hot. Lay the plastic back over the top to prevent splatter.2. Use HALF POWER. Most microwaves are pretty high power. It doesn't give food a fighting chance. Double the time, halve the power.3. Stir. Microwaves work by agitating water molecules. Give them a stir half way through to evenly heat. Unless you love eating both scalding hot and ice cold food in the same bite.4. Stay tuned. Keep an eye on it. If its sizzling, its likely hot (maybe too hot).Use these tips to make your food even better, or, at least, not destroy it.
These are things that you may see upcoming at Evolve or just what I am thinking. Or they could just be some musings. Who knows...I love this recipe. It was inspiration for our Beef and Mushroom.I went to a restaurant and had a chicken breast with goat cheese, sun dried tomato and a lemon sauce. It was so good. I made my own version. You can see it on my facebook page.We call small baked brown squares brownies...seems like we would call them chocolate cake squares or something. Imagine if we took that same naming approach to lemon bars...yellowies?Thinking about what we are going to do for New Years Challenge. I'm thinking a clean eating detox? Thoughts?I love coffee...little known fact. It's what runs in my veins. I found this and love it. (check out the video at the end to see effects of coffee)Is there such a thing as free range eggs int he winter?? Are the grocery stores lying to you?I was out at Campo Lindo Farms a few months ago and I saw the chickens out frolicking in the field. I asked Jay and Carol what do the chickens do in the winter. They say "they stay in the barn."I asked "What makes them free range then?" They said, "the ability to go outside.""Do any of them go outside?""No, it's cold."So, they are all lying to us in the winter! The best you can do is support a local farmer. If you are in KC, buy Campo Lindo Eggs.
